COLD dishes to keep cool!

The heat wave is still going and  I am dying in this weather!  Recently I’ve been craving ANYTHING cold to eat.  Here are some international cold dishes that are easy, yummy, COLD, and kid-friendly!

Japanese Soba Noodles from The Honest Cooking – The Cold Soba Noodles is light and subtle, but can totally fill you up!

Easy Pasta Salad from Two Peas & Their Pod – A colorful and fun salad kids will love!

Chinese Cold Sesame Noodles (Liang Mian) from Cook Fun Book – Protein?  Check.  Starch?  Check. Veggies?  Check.  All your basic nutrients in one COLD dish for your kids!

Cold Korean Noodles (Naeng Myun) from the Kitchn – This dish of buckwheat noodles and cold, tangy broth topped with crisp cucumber, pear, and even a few ice cubes will give you an extra chill factor.  I absolutely LOVE this dish, in fact, I’m craving it for lunch today. The soup is light and cold, the noodles are chewy, and I love the slices of pear!

FroYo Bites from Super Healthy Kids –  Frozen Yogurt Bites…who wouldn’t love them?!  Woudln’t your kids just love to pop these little snackers in your mouth on a hot summer day!?

Mexican Ceviche from Mexican Food and More – A yummy and refreshing dip on any day!
