Kid-Friendly GREEN meals for St. Patrick’s Day!

St. Patrick’s Day is coming up so bring out all the greens!  Green beans, green cabbage, green bell peppers, green apples, and even the green grapes!  Take advantage of St. Patrick’s Day — tell your kids is a holiday to celebrate the color green, but it’s also another way to sneak in all the healthy green veggies and fruits in their meal. Shhh. =) Here are some recipes I’ve collected from Super Healthy Kids so you can have a very green meal this weekend!

1.  Green SpinachWrap

  • 1 Spinach Wrap
  • 2 TBL Mozzarella cheese, shredded
  • 1 Avocado, sliced

Melt the cheese on the wrap.  Place avocado down the center of the wrap, and roll up!

2.  St. Patty Snow Peas

  • 1 Green Pepper
  • 2 Cups snow peas
  • 1 TBL olive oil
  • 2 TBL Feta cheese
  • 1 teaspoon honey
  • 1 teaspoon rice vinegar
Slice a section cross-ways out of your green pepper and save for a shamrock bowl
Chop snow peas in half
Chop the remaining part of the green pepper
Heat one tablespoon olive oil in a skillet
Add snow peas and green pepper, and saute until soft, about 5 minutes
Add feta cheese
Combine honey and vinegar in a small bowl
Drizzle honey/vinegar on warm snow peas
Scoop snow pea salad into your green pepper shamrock bowl3.  Cheesy Spinach Bites

  • 1 Tbsp Olive Oil
  • 1 Onion, chopped
  • 2 Garlic cloves, minced
  • 2 Large Eggs, Beaten
  • 1 Cup Low-fat Cottage Cheese
  • 1/2 Cup Mozzarella Cheese, shredded
  • 1/2 Cup Parmesan Cheese, Grated
  • 3-4 cups fresh Spinach, chopped
  • 1/4 Tsp Salt
Preheat oven to 375 degrees
Heat oil in a saute pan over medium heat and cook the onions and garlic until cooked through and caramelized – about 10 minutes
Whisk eggs in a bowl
In a food processor add cottage cheese, mozzarella, Parmesan cheeses, spinach, and onion/garlic mixture. Pulse to combine
Pour the mixture into greased mini muffin tin
Bake for 20-25 minutes or until the filling is set and golden on top

4.  Avocado Salad (also known as Alligator Pears)

  • 2 cups corn kernels
  • 3 ounces walnuts
  • 2 ripe avocados (sliced and chopped)
  • 1/4 cup lemon juice
  • 1/4 cup light sour cream.

Mix corn, walnuts and avocados together.  In separate bowl, mix lemon juice and sour cream.  Add to mixture to the salad, stir and serve.  Tastes great chilled.

5.  Sweet & Sour Grape Smoothie

  • 2 cups frozen grapes
  • 1/2 cup vanilla yogurt
  • 2/3 cup water

Blend until smooth!
