Kid Friendly Superbowl Snacks!

Happy February First Everyone!

Whose excited for the big game on Sunday?!  I know most dads are gearing up and getting pumped for the Superbowl while most moms are preparing for an incredible day of cooking and cleaning…well, NOT ALL… I know there are some mommies out there who love their football!  I know I do!  That Tom Brady is quite the nickelback… or quarterback… WHATEVER he is, he’s great (lucky Gisele).

For the daddies:  TV…check.  Chips & dips…check.  Pizza…check.  Chicken wings…check. Beer, beer, and more beer…CHECK!  But lets not forget about the kids!  They need some lovin too!

For those from Pluto:  I’ve been looking up recipes by Super Healthy Kids and they have some creative meals, snacks, and finger foods that looks cute AND yummy for kids to eat!  Here are some halftime snacks for this Sunday that kids and adults can enjoy together!

Mushroom Pizza Bites

  • First step – remove the inside of your mushrooms with a spoon.  Be careful not to crack the cap.  Then after you have rinsed the mushrooms,  (I wiped mine down with a damp cloth) bake at 400 degrees for 7 minutes.  If they get a little juicy inside, pour the juice off.
  • Next prepare your toppings.  Some topping choices:

– Pineapple
– Red and Green Bell Pepper
– Zucchini
– Olives
– Mozzarella Cheese
– Canadian Bacon
– Mini Pepperoni
– Mozzarella Cheese
– Pizza Sauce

  • Next assemble your pizzas! We put a spoonful of sauce in the bottom of each mushroom, then cheese and toppings.  Bake in your oven until the cheese is melted and bubbly.

Parmesan Sesame Pita Chips

  • Whole wheat pita pocket bread (that we cut in half)
  • Arranged the pita shapes onto a cookie sheet.
  • Brushed the pita shapes with olive oil, using a pastry brush.
  • Sprinkled each chip with parmesan cheese and sesame seeds.
  • Baked in the oven at 425 degrees for 10 minutes.
  • Served with hummus, guacamole, salsa, or cheese.

Adding sesame seeds to this snack is a great way to get more calcium, magnesium, iron, phosphorous, vitamin B AND fiber!

Edamame Hummus (but you can tell the kids it’s Green Monster Mystery Dip!)

  • 2 cups shelled soy beans (boiled, or heated so they aren’t frozen or raw)
  • 1 clove garlic, chopped
  • 1/2 cup plain yogurt
  • 2 TBL lemon juice
  • 1 TBL olive oil
  • Dash of salt and pepper

Place all ingredients in a food processor and pulse until smooth.  Pair this yummy dip up with the Parmesan Sesame Pita Chips!

Avocado Pizza

  • 1 loaf French Bread (they do have whole wheat French Bread in some grocery stores!)
  • Pizza Sauce
    – One 8 ounce can tomato sauce
    – 1 TBL water
    – Dash of Oregano
    – Dash of garlic salt
    – Dash of onion powder
  • Part Skim Mozzarella
  • 1 Onion, chopped
  • 1 Tomato, chopped
  • 1 Avocado, chopped

Slice French Bread along the length of the loaf.  Open French Bread and place on cookie sheet.  Spread pizza sauce, cheese and vegetables on bread.  Bake at 425 degrees for about 10 minutes, or until cheese is melted and veggies are tender.

Turkey Wrap

  • Whole Wheat Wrap
  • 1 tablespoon Cranberry Sauce
  • 1 tablespoon light Cream Cheese spread
  • Turkey- Zucchini ribbons
  • Yellow squash ribbons
  • Avocados
  • Lettuce
  • Spinach
  • Tomatoes

Combine cranberry sauce and cream cheese in a small bowl.  After thoroughly combined, spread on one entire whole wheat tortilla.  Using a vegetable peeler, slice long strips from the zucchini and squash and place in center of tortilla.  Chop avocado, lettuce, spinach, tomatoes and turkey, and spread on tortilla.  Roll tightly, using the cream cheese spread on the edges to keep it sealed.  Chill in fridge until ready to eat.  Place on cutting board and cut two inch pieces from the roll.  EAT!

Try to get rid of the fried fatty foods and make these delicious finger foods instead!
